6 eggs, separated
1/2 cup sugar
1/2 cup Jamaica rum, or substitute
1 pint brandy, rye or bourbon
2 tsp vanilla extract
3 cups heavy cream
Nutmeg (use whole if you have a grater)
Step 1: Beat egg yolks well, adding sugar gradually.
Step 2: Add rum while beating, then brandy, rye or bourbon.
Step 3: Add vanilla and a pinch of ground nutmeg.
Step 4: Chill several hours, adding cream and milk from time to time and stirring.
Step 5: Beat egg whites until stiff.
Step 6: Fold half into chilled mixture.
Step 7: Add 3 tbsp more sugar to remaining egg whites and beat until very stiff.
Step 8: Spread on top of eggnog and swirl.
Step 9: Sprinkle with nutmeg.
