
Peanut butter adds the perfect sweetness to this pumpkin and sweet potato, velvety smooth soup.
3 tbsp unsalted butter
3 cups canned pumpkin pie filling or fresh puréed pumpkin
3 cups puréed sweet potatoes
1 cup natural unsalted peanut butter
6-1/2 cups chicken or vegetable broth
1 tsp freshly ground black pepper
1 tsp salt
Sour cream as optional garnish
Chopped chives as optional garnish
Step 1: Melt butter in a large saucepan over medium heat. Stir in pie filling or fresh pumpkin, sweet potatoes and peanut butter.
Step 2: Add chicken or vegetable broth, pepper and salt, stirring until smooth.
Step 3: Reduce heat and simmer for about 25 minutes. To serve, garnish soup with sour cream and chives.
Makes 6 to 8 servings
