Berry Peach Cobbler Recipe

Recipe:

Step 1: Pre-heat oven to 400°F. In a medium bowl, combine sugar, peaches, blueberries, and tapioca. Place fruit mixture into a greased an 8″ round casserole dish. Dot the top of the fruit mixture with the butter.

Step 2: For the cobbler topping: In a medium bowl, sift together dry ingredients. Rub in butter pieces with your fingertips until mixture resembles coarse crumbs. Whisk together the egg and milk and stir into dry mixture until dough forms a ball.

Step 3: Drop dough onto fruit in 6 large spoonfuls. Bake for 25-30 minutes until golden. Serve warm with vanilla ice cream, if desired.

Ingredients

Fruit mixture
1/2 cup sugar
2 cup fresh peaches, peeled and sliced
1 cup fresh blueberries
1 tbsp instant tapioca
1 tbsp unsalted butter

Topping
1-1/2 cup all-purpose flour
1/2 cup sugar
1-1/2 tsp baking powder
1/2 tsp salt
1/4 c. cold unsalted butter, diced into pieces
1 egg
1/2 cup milk
