Famous Fudge Cake

Ingredients

Cake

  • ½ cup butter or margarine
  • 1 cup brown sugar
  • ½ cup cocoa
  • ½ tsp vanilla
  • 1 egg
  • ½ cup flour
  • ⅓ cup chopped walnuts
  • Pinch of salt

Icing

  • 3 tbsp butter
  • 1 ½ tbsp milk
  • 2 tbsp cocoa
  • 1 tsp vanilla
  • 1 ½ cups icing sugar
  • 16 walnut halves, for garnish

 

Directions

Yield: Makes 16 Squares

  1. Preheat oven to 350ºF. Add butter to an 8″-sq. metal baking pan and melt in the oven, about 5 minutes. Combine brown sugar and cocoa in a medium bowl, pour in melted butter and stir well. Add vanilla and egg, mixing well, then stir in flour, salt and chopped walnuts and continue mixing until well combined.
  2. Spread batter evenly in pan and bake for 20 minutes. Do not over-bake. Cool in pan on a rack for 10 minutes. Meanwhile, prepare icing.
  3. To make icing, melt butter with milk over low heat in medium saucepan. Add cocoa and vanilla and stir well, then add icing sugar all at once and stir. Continue to cook and stir until frosting is shiny and smooth, about 3 minutes. Do not let it boil. Immediately spread frosting over warm cake. Press walnut halves into frosting, spacing evenly. Cool cake completely. Cut into squares.
