Rosie Daykin has graced the House & Home pages as a baker, designer, gardener and cookbook author. The Vancouver doyenne of “home” has just published a new cookbook, The Side Gardener , featuring her own kitchen garden, greenhouse and fresh, creative dishes.

Inspired by a Japanese sunomono salad, the Cucumber & Prawn Noodle Salad is kicked up a notch with spicy prawns. “Cucumber is so bright and fresh compared to the heat of the prawns,” says Rosie. “Then you get a textural feast with the smooth noodles and crunchy radish.”

A huge fan of rhubarb, which she grows in her flower beds, Rosie offers two ways to use it: buttery, herb-filled turkey burgers with rhubarb ketchup, and the rich and creamy Rhubarb Panna Cotta. “I’m always looking for ways to use up the rhubarb I plant,” says Rosie. “It’s so lovely and tart — and the flavour of rhubarb with a turkey burger is just perfection.”

“Tart rhubarb is hiding in the bottom of this creamy dessert, and the graham crumb on top adds crunch.”

Next on the agenda, Rosie is considering offering garden design and planning to her clients. “For me, the garden is more than just a vegetable patch; it’s about vegetables and flowers comingling into a beautiful tapestry of plants and produce.”
