Australian food writer and former MasterChef Australia contestant Alice Zaslavsky has released the cookbook In Praise of Veg, and you’re going to want to check it out. The pages are packed with vegetable-forward ideas, including a Saffron Orzo with Charred Deli Artichokes, Torn Zucchini Flower Pizza and Salt-Baked Yam Tacos (or Yacos, if you will). But don’t worry meat lovers! This book isn’t only for vegetarians. Instead, it makes the vegetable the star of the show to change your point of view about cooking.

Saffron Orzo with Charred Deli Artichokes
This dish will make you feel like you’re on vacation in Greece with its heavy use of both saffron and artichokes, which are both from the Mediterranean nation.

Torn Zucchini Flower Pizza
This recipe includes a bit of nduja sausage or chorizo if you’re hoping for some meat, but it’s the zucchini (both sliced and in torn flower form) that’s the real star of this show. Add in some chili oil and you’ve got yourself a showstopping pizza.
