Eric Vellend’s Famous Coleslaw

Recipe: Eric Vellend

This crunchy, mayo-free coleslaw plays a refreshing foil to an earthy burger.

Ingredients

Dressing

  • 4 tsp granulated sugar
  • 4 tsp Dijon mustard
  • 1⁄2 cup cider vinegar
  • 6 tbsp vegetable oil

Slaw

  • 1 tbsp red wine vinegar
  • 1⁄3 cup thinly sliced red onion
  • 2 lbs. green cabbage, cored, thinly sliced with mandoline
  • 1 medium carrot, peeled, julienned
  • 2 red finger chilis, seeded, julienned
  • 2⁄3 cup chopped cilantro or parsley
  • Salt and pepper, to taste

Directions

Yield: Serves 8

  1. To make dressing, whisk together all ingredients in small bowl.
  2. To make slaw, combine red wine vinegar and onion in large mixing bowl. Marinate for 20 minutes. Add remaining ingredients and dressing. Mix. Mound in serving bowl.
