Flatbread With Caramelized Onions

Recipe:

Step 1: Heat oil in a large, deep skillet on medium-high heat. Add onions and cook until wilted and starting to brown.

Step 2: Add sugar, vinegar, salt and pepper. Reduce heat and cook gently for 15-25 minutes, or until onions are caramelized and brown. Cool.

Step 3: Roll pastry into a rectangle about 12″ x 16″. Place on a baking sheet lined with parchment paper.

Step 4: Spread onions over pastry. Dot with cheese. Sprinkle with chervil. Refrigerate if not baking immediately.

Step 5: Bake in a preheated 400ºF oven for 20-25 minutes, or until cheese has melted and pastry is crisp. Cool for 5 minutes. Cut into 20 pieces and then cut each piece in half diagonally.

Makes 40 triangles

Ingredients

2 tbsp olive oil
3 large onions, chopped
1 tbsp brown sugar
2 tbsp balsamic vinegar
1/2 tsp salt
1/2 tsp pepper
1/2 lb. frozen puff pastry, defrosted but cold
6 oz. Canadian Brie (rind removed), diced
6 oz. mild Canadian blue cheese, diced
2 tbsp chopped fresh chervil or parsley
