Spinach And Feta Mini Strudels Recipe
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, finely chopped
1/2 lb. feta cheese, crumbled
2 10 oz. packages frozen spinach, defrosted, squeezed dry and chopped (about 2 cups)
3 tbsp chopped fresh dill
1/2 tsp pepper, pinch of nutmeg
3/4 phyllo pastry (12 sheets)
1/2 cup dry breadcrumbs
1/3 cup melted butter or olive oil
Step 1: Prepare filling by heating oil in a small skillet and cooking onions and garlic until tender and fragrant.
Step 2: Place in a large mixing bowl. Add cheese, spinach, eggs, dill, nutmeg and pepper and mix well to combine well. Set aside.
Step 3: Open phyllo pastry and lay out on counter. Cover with plastic wrap and then a damp tea towel. Have breadcrumbs on hand. Combine butter and water and have a pastry brush ready.
Step 4: Arrange one sheet of pastry on work surface. Brush with butter and sprinkle with breadcrumbs. Repeat with 2 more layers.
Step 5: Arrange 1 cup cheese mixture down one long edge of pastry. Roll up lengthwise tucking in ends as you roll. Transfer to a baking sheet and score the top of the pastry into 10 pieces with horizontal slashes. Repeat until 4 rolls are made. Brush with any extra butter.
Step 6: Bake in a 400ºF oven for 20-25 minutes until well browned. Slice through and serve warm or at room temperature.
