Grilled Pimiento Cheese Sandwich Recipe
Pimento Cheese
Step 1: In a large bowl, combine the cheeses, pimiento peppers and their juice, sugar, mayonnaise, and pepper. Using a wooden spoon, an electric mixer at medium speed, or a food processor, blend the ingredients until well combined. Cover and chill for at least 3 hours or, preferably, overnight.
Sandwiches
Step 1: Heat a charcoal grill or gas grill to medium-high heat.
Step 2: Brush one side of each piece of bread with olive oil. Place a scoop of pimiento cheese between 2 slices of bread, oiled side out. Do not overfill, as the cheese can easily ooze out the sides while on the grill.
Makes 4 sandwiches (with 2 to 2 1?2 cups pimiento cheese).
