Mary Berg’s Butter Tart Squares

“These squares are the perfect sweet treat to add to your cookie exchange! And they truly are so easy — all of that butter tart goodness without the fuss of making pastry or forming tarts.”

Ingredients

Pastry

  • 1½ cups all-purpose flour
  • ⅓ cup packed brown sugar
  • ½ tsp kosher salt
  • ¾ cup unsalted butter, melted

Filling

  • ¾ cup packed brown sugar
  • ⅓ cup golden corn syrup
  • ¼ cup maple syrup
  • 2 eggs
  • ¼ cup unsalted butter, melted
  • 1½ tsp white vinegar
  • 1 tsp vanilla extract
  • ¼ tsp kosher salt
  • ¾ cup chopped pecans
  • ½ cup raisins, optional

Directions

Yield: Makes 9 Large Squares

Make Pastry

  1. Preheat oven to 350°F, lightly grease 9″ x 9″ baking pan with nonstick cooking spray and line with parchment paper.
  2. Add flour, brown sugar and salt to large bowl and mix, until well combined. Pour in melted butter and mix, until combined, and mixture is evenly moist. Turn dough out into prepared pan and press across bottom and about 1 cm up sides.
  3. Poke crust all over with fork and bake for 10 minutes.

Male Filling and Bake

  1. Meanwhile, whisk together brown sugar, corn syrup, maple syrup, eggs, melted butter, vinegar, vanilla extract and salt in mixing bowl or large glass
    measuring cup.
  2. Remove crust from oven, sprinkle pecans and raisins, if using, overtop, and pour filling mixture over that. Return pan to oven and bake for another 25 to 30 minutes, or until filling is just set but still a bit wobbly.
  3. Cool to room temperature before removing from pan and slicing into 9 large squares. Feel free to cut into smaller squares, if desired.
