My Favorite Drumsticks With Peanuts and Lime

“Drumsticks are sort of impossible to screw up. Dark meat on a bone stays moist even if you overcook it. There was a time when I served these at every dinner party over the course of one summer.”

 

Ingredients

12 chicken drumsticks

1⁄4 cup soy sauce
1⁄4 cup maple syrup
1 tbsp grated garlic
1 tbsp grated ginger
2 tbsp corn, safflower or grapeseed oil, plus more for chicken
1⁄4 cup salted peanuts, roughly chopped
4–5 green onions, trimmed and sliced in 1⁄4″ rounds

Lime wedges, for serving

Make Drumsticks

1. Place chicken drumsticks in large freezer bag. Add soy sauce, maple syrup, garlic, ginger and oil. Seal and shake well to coat. Ideally, you can do this the night before, or a minimum of 1 hour before.

2. Preheat oven to 425°F. Line baking sheet with parchment paper.

3. Remove chicken from bag, shaking off any extra marinade, and place on baking sheet. Pat chicken dry with paper towels to remove excess moisture (the enemy of crispy skin). Drizzle with a little bit of oil and bake for 30 to 35 minutes, until skin is crispy and dark brown.

4. Place chicken on large platter, and scatter with chopped peanuts and green onions. Serve with lime wedges on the side.
