4 Easy & Delicious Sheet Pan Recipes From The New Cookbook Hot Sheet

As longtime New Yorkers, food editors and cookbook authors, Olga Massov and Sanaë Lemoine are used to the joys of cooking in tiny kitchens . I am, too, living as I do with my husband, Perry, in 500 square feet. That’s why I love their cookbook, Hot Sheet, so much. Not only are the recipes delicious, they’re perfect for my small space, with most using only one half sheet pan to create an entire meal. It’s almost as if Olga and Sanaë, who have spent years whipping up meals in 500-square-foot NYC apartments themselves, have developed these recipes just for me.

Both former cookbook editors at Phaidon, Olga, now an assistant recipes editor at The Washington Post, and Sanaë, a cookbook author, editor and novelist, teamed up to write a book that would be a fresh take on one-pan recipes. The result is an array of elevated dishes that are sophisticated enough for a party, but also work for a weeknight meal.
Olga and Sanaë’s experience is evident on every page. Each recipe is made with easy-to-find ingredients that I almost always have on hand and the instructions are clear and concise; everything I’ve made has turned out perfectly and identical to the pictures on the first try.
Each dish has a new perspective that makes it special. The Mushroom Parmigiana recipe, for instance, is such a great plant-based twist on classic chicken parmigiana that I’ve already made it three times.
Oven Fish Tacos with Avocado, Radishes and Cumin-lime Crema
Oven Fish Tacos are made with seasoned fish, creamy guacamole, cumin-lime crema and jalapeño-onion quick pickles. The components for this bright, citrusy dish come together beautifully; I love the flavour kick from the chipotle and chili.

Eggplant with Grapes, Feta and Lemony Tahini
A favourite of Olga’s husband, a certified eggplant hater, is Eggplant with Grapes, Feta and Lemony Tahini. It’s silky with a tang from spiced tahini dressing that complements the salty feta and fresh herbs.

All-the-crispy-bits Mac and Cheese
After forever scraping the topping off mac and cheese at dinner parties to have it all for herself, Sanaë took the lead creating All-the-crispy-bits Mac and Cheese, where the crunchy topping is extra generous without compromising the creamy sauce. I’ve made it in under an hour using just two dishes and the richness can’t be beat.

Roasted Chicken with Vegetables and Dijon Mustard
Roasted Chicken with Vegetables and Dijon Mustard is also a standout, thanks to the addition of mustard. “I was working with New York chef, restaurateur and TV personality Marc Murphy a few years ago, and he taught me to toss roasted vegetables in Dijon mustard, which changed everything,” says Olga. “Combined with the chicken juices, it’s heavenly.”

Though Olga’s son thinks she and Sanaë need to start work on a sequel to Hot Sheet called Hot Sheet: Even Sheetier, for now, both are busy with their day jobs. And I’ll be busy cooking these recipes on repeat.
