Arugula Tartine Recipe
1 French baguette
1 small wedge of Parmesan cheese
2 avocados, peeled and chopped
3/4 cup chicken stock
Salt and pepper
Juice of 1 lemon
1/2 tsp chili paste
1 tsp Worcestershire sauce
1/2 tsp green
Large bunch arugula, washed (set aside a few leaves for garnish), blanched and chopped
Step 1: Slice bread. Toast slices and rub each side with the cut end of the scallion for flavour.
Step 2: Shave off Parmesan and place on toast.
Step 3: In a food processor, purée avocado with stock, salt and pepper, lemon juice, chili paste, Worcestershire and Tabasco. Fold in arugula.
Step 4: Toast the bread and cheese. Spoon purée on top and garnish with a leaf of arugula.
Makes 6 to 8 appetizer servings
