Jungle Pork Curry Recipe

A dinner idea from Vancouver's Hawksworth Restaurant.

Ingredients

5 cleaned pork cheeks or pork shoulder
5 oz. shallots
3/4 oz. garlic
2/3 oz. galangal
5 oz. lemongrass
4 lime leaves
2 tbsp shrimp paste
8 red jalapeños
2 tbsp cumin
2 tbsp white pepper
2 tbsp coriander seed
1 tbsp fenugreek
1 tsp ground cloves
1 tsp nutmeg
2 tbsp Hungarian paprika
2/3 cup grape seed oil
1 bunch cilantro stems
5 quarts chicken stock
2 quarts water
2 cups san marzannop tomato

Directions

Step 1: Combine all ingredients in a food processor except meat, stock, water and tomato, and mix thoroughly.

Step 2: Marinade meat with food processor ingredients for at least 12 hours.

Step 3: Place paste and meat in a pot on medium heat and cook for 25 minutes.

Step 4: Add rest of liquid and simmer on low and slow for 2 hours or until meat is tender.

Step 5: Allow to sit overnight for best results, then serve warm over rice with fresh cilantro on top.
