Published on May 9, 2022

After feeling inspired by the many cities and provinces (from Toronto to Tulum!) that had a cookbook inspired by its food scene, writer Naomi Hansen decided to shine the spotlight on Saskatchewan. Organized by region, her cookbook highlights dishes from restaurants across the province, such as Calories in Saskatoon (don’t miss the Wild Rice Risotto with Fiddleheads and Morels).
Keep scrolling to see three restaurants in Saskatchewan, and the recipes that keep patrons coming back again and again.

Wild Rice Risotto
Utilizing fresh, local, spring ingredients, such as wild rice, morel mushrooms and fiddleheads, this risotto recipe is light and classy. It comes directly from the menu of Calories restaurant in Saskatoon and feature items grown around the province on their menu.

Smokehouse Baby Back Ribs
Head chef of Rawhides (Stenen, Sask.), Isagani Puyos originally came up with this recipe in 2013 when working as a line cook and it has since become a very popular item on the menu because of its slow-cooked sweet, smokey taste. Add it to your summer barbecue lineup with coleslaw or baked potatoes.

Fancy S’more
This campfire classic has been elevated by Nightjar Diner in Swift Current, Sask. through a creamy chocolate semifreddo base, topped with marshmallow and a white chocolate graham crumb. The dish proved so popular that when the owners’ tried to take it off the menu they received postcards begging for its return.
