Bacon-wrapped Jalapeño Poppers

Ingredients

Barbecue Sauce (batch)

  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp yellow mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste

Jalapeño Poppers

  • 12 fresh jalapeño peppers
  • 8 oz. cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp chipotle powder
  • 1/4 tsp cumin
  • 1 tsp lime juice
  • 12 slices thin-cut bacon, each slice cut in half
  • Barbecue Sauce (see above)

Directions

Yield: Makes 24 Poppers

Make Jalapeño Poppers

  1. Preheat grill to 400°F. Slice jalapeños in half lengthwise, and remove seeds and membranes.
  2. In large, bowl, mix together cream cheese, shredded cheddar cheese, garlic powder, onion powder, cumin and chipotle powder, until well combined.
  3. Spoon cheese mixture into jalapeño halves, filling evenly.
  4. Wrap each stuffed jalapeño with half slice of bacon and secure with toothpick.
  5. Place bacon-wrapped jalapeño poppers on grill.
  6. Cook on preheated grill for 20 to 25 minutes, until bacon is crispy and jalapeños are tender.
  7. Remove from grill and let cool slightly. Brush thin layer of Barbecue Sauce over each popper and serve.
