- 10 rainbow carrots
- 1 tbsp flat-leaf Italian parsley
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
Directions Yield: Makes 3 Side Dishes
- Preheat oven to 350°F. Trim and quarter carrots. Chop parsley.
- Mix all ingredients on baking sheet until carrots are well-coated with oil. Use your hands!
- Roast carrots 15 minutes. Remove from oven and stir well, then roast 10 more minutes.
- Allow to cool, then serve.
