Laura Prepon’s Rainbow Carrots

Recipe: Laura Prepon

We like the rainbow carrots for color, but plain orange ones are fine, too. Serve with Parcel-Poached Salmon and Quinoa Noodles.

Ingredients

  • 10 rainbow carrots
  • 1 tbsp flat-leaf Italian parsley
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper

Directions

Yield: Makes 3 Side Dishes

  1. Preheat oven to 350°F. Trim and quarter carrots. Chop parsley.
  2. Mix all ingredients on baking sheet until carrots are well-coated with oil. Use your hands!
  3. Roast carrots 15 minutes. Remove from oven and stir well, then roast 10 more minutes.
  4. Allow to cool, then serve.
