Salmon With Mango Salsa Recipe
1 large mango, peeled, pitted and diced
1/4 cup chopped fresh cilantro
1/4 cup chopped red onion
1 tbsp fresh lime juice
2 tsp serrano chili, seeded and minced
1 tsp lime zest
1 garlic clove, minced
2 tbsp olive oil
2 6-oz. salmon fillets
Step 1: Heat barbecue to medium-high. Combine first seven ingredients in small bowl; mix in 1-1/2 tbsp oil. Season salsa with salt and pepper to taste.
Step 2: Brush salmon with remaining 1/2 tbsp oil. Grill until opaque in centre, about 6 minutes per side. Serve with mango salsa.
Makes 2 servings; recipe can easily be doubled.
