The team behind award-winning Montreal restaurant Elena (Janice Tiefenbach, Ryan Gray and Marley Sniatowsky) have teamed up with food writer Stephanie Mercier Voyer for a cookbook — Salad Pizza Wine: and Many More Good Things from Elena. Like the title says, try salads like Tomato Tonnato, Dany pizza with spinach and sesame seeds, and delicious mains like Dante Chicken Thighs. Decadent desserts include Nutty Chocolate Ganache Tart and more. Dig in!
Dany Pizza
“If you grew up or partied in Montreal anytime between 1998 and 2014, there’s a good chance you ended up eating a slice at Pizza Dany on de la Montagne. It was also the place we used to go to after we finished working long nights at Nora Gray . Steph and our friend Nick Rosati (who now co-owns Crèmerie Dalla Rose and Cafè A Posto ) would go there all the time on their way back to the Plateau and would joke about getting pulled over for “overeating and driving” as they wolfed down greasy slices of spinach pizza with sesame seeds. Being able to make our version of Dany’s famous spinach pizza is our way to still indulge and reminisce about those years now that our partying days are behind us.”

Tomato Tonnato
“When we decided to write this book, our first thought was, “You know what the world needs right now? Another take on vitello tonnato!” Just kidding—nobody needs another version of this classic Piedmontese dish. But because tomato season is so special and because Ryan’s and Steph’s moms really loved this version, in which savory beefsteak tomatoes play the part of thinly sliced veal, we just had to include it in here.”

Dante Chicken Thighs
“Could we even call this a cookbook if we didn’t include at least one grilled or roasted chicken recipe? We’ve never had a chicken dish on the menu at the restaurant, but we all love chicken. Everybody loves chicken! But we didn’t want to write up a chicken recipe just for the sake of it. We wanted it to make sense for us and for you. That’s why we decided to repurpose our Dante Vinegar as a marinade for the chicken. The vinegar not only helps tenderize the meat, but also keeps it from drying out. It’s a one-stop brine and marinade shop! You will get tastier results using a charcoal grill (obviously), but the chicken will still be juicy and delicious cooked over medium on a gas grill.”
