Edamame Salad Recipe

Edamame — or green soy beans — can be found at Asian grocers and natural food stores. They are also an excellent source of protein.

1 16 oz. bag frozen shelled edamame
One bunch scallions, thinly sliced
1 cup diced celery
4 large radishes, cut in half and thinly sliced
1 cucumber, diced
1 cup loosely packed cilantro leaves, chopped

1/4 cup rice wine vinegar
1-1/2 tbsp olive oil
Juice from 1 lemon
3 tbsp honey
1/8 tsp freshly ground black pepper
1/4 tsp salt


Step 1: Place first six ingredients in a large bowl and mix to combine.

Step 2: Whisk dressing ingredients together, pour over edamame mixture, and toss to coat. Cover and chill for half an hour before serving.
