Sun Crushed Cocktail Recipe
A cool drink idea from William Yeoward's American Bar. "Whereas some drinks with the word 'sun' attached to them make my mind race to the beach, here I think of Ascot, Wimbledon, Henley and Glyndebourne. It's a drink that everyone seems to enjoy, being simultaneously slightly tangy and slightly sweet, and then there is the final topping up with Champagne. It also looks very appealing, having a glorious colour. It must have a lot of crushed ice in it, and, of course, it should be sipped through a straw."
3 orange slices
2 bar spoons brown sugar
10 red currants
2 bar spoons lemon juice
2 oz. pomegranate liqueur
Champagne, to top up
Sprig red currants and half-slices of orange for garnish
Step 1: Muddle together the orange, sugar and red currants in a highball glass.
Step 2: Add the lemon juice, pomegranate liqueur and crushed ice. Stir. Top up with Champagne, add more ice and garnish with the red currants and orange slice.
