Rocket & Endive Salad Recipe

Step 1: Combine rocket (arugula) and endive in large salad bowl.

Step 2: Heat oil in a large frying pan over medium-high. Add pancetta and cook 3-4 minutes, or until crispy. Remove pan from heat, add balsamic vinegar and deglaze. Pour warm dressing over greens. Season with salt and pepper and toss well.
