Devin Connell’s Heavenly Cookie Cakes

Get Devin’s take on the classic chocolate chip cookie!
Ingredients
Serves 12
- 1 cup (2 sticks) cold unsalted butter, cubed
- 1 cup light brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tbsp cornstarch
- 1 tsp baking soda
- 1 tsp kosher salt
- 3 cups (two 250 g bags) dark chocolate chips, minimum 50%
Directions
Make Dough
- Preheat oven to 410°F. Using stand mixer or handheld beaters, cream butter and sugars on high for 4 minutes. Add eggs and vanilla, and beat to incorporate.
- Slowly mix in dry ingredients; do not overmix. Hand-stir in chocolate chips. Refrigerate batter for a minimum of 60 minutes.
Bake Cookies
- Weigh into 4½ oz. balls. Place 6 at a time on parchment-lined baking sheet and very slightly press down with dampened fingers.
- Bake for 12 minutes, until golden brown edges are slightly darker brown. Cookies will not flatten; they should resemble the shape of a muffin top.
