Originally a popular blog of the same name, Occasionally Eggs is the debut cookbook from Toronto-born food writer and avid gardener Alexandra Daum. With more than 110 vegetarian recipes that have been developed with the seasons in mind, this book boasts fresh and flavorful dishes such as Peach Guacamole and Pesto Vegetable Tarte, plus sweet treats like Blueberry Nut Butter Cookies for fall and winter snacking. Peach Guacamole
“Stone fruits are delicious in savory dishes, but this is often overlooked in favor of using them in pies and other sweets,” says Alexandra. “Peaches add a sweet element to this guacamole, making it even better for topping a taco or serving with chips in the summer. The lime keeps the avocado fresh for a while, so you can make this a couple of hours ahead of time without worrying about ugly guacamole.”

Pesto Vegetable Tart
“Striking in appearance but with simple summer ingredients, this vegetable tart is a true centerpiece dish,” says Alexandra. “An easy press-in pastry with buttery almond flour, almond butter pesto and the best hot-weather veg make for a robustly flavored meal. This makes a great picnic dish and tastes just as good at room temperature as it does fresh out of the oven.”

Blueberry Nut Butter Cookies
“This is an extraordinarily simple recipe, exactly what I look for in the summertime,” says Alexandra. “It makes the best chewy cookie, without any leavening agent needed, or wheat, or eggs. Blueberries are lovely in these, both delicious and attractive — but if they’re out of season for you, just use chocolate!”
