Glazed Pumpkin Cookies

Sweet and spicy pumpkin cookies are perfect for enjoying with a coffee on a chilly, winter afternoon.

Ingredients

Cookies

  • 2 1⁄2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1⁄2 tsp cloves
  • 1⁄4 tsp ginger
  • 1⁄2 tsp salt
  • 1 cup butter, softened
  • 1 1⁄2 cups white sugar
  • 1 1⁄4 cup canned pumpkin
  • 1 egg
  • 1 tsp vanilla extract

Glaze

  • 1⁄2 cup brown sugar
  • 1⁄4 cup milk
  • 3 tbsp butter
  • 1 tsp maple extract
  • 1 cup icing sugar

Directions

Yield: Makes about 4 dozen

1. Preheat oven to 350°F. To make cookies, sift and set aside flour, baking powder, baking soda, cinnamon, nutmeg, cloves, ginger and salt.

2. Beat together softened butter and white sugar until creamy. Add pumpkin, egg and vanilla.

3. Mix sifted dry ingredients with pumpkin mixture until well blended. Drop by the tablespoon on parchment-lined cookie sheets. Bake for 12 to 13 minutes.

4. To make the glaze, in a medium saucepan, combine brown sugar with milk and butter and heat until it comes to a boil. Allow to boil for 1 minute, then remove from heat. Add maple extract and about a cup of icing sugar (add enough icing sugar so that glaze is smooth but not thick enough to be spreadable). Whisk until smooth and combined. Dip cooled cookies into glaze and set on a cookie sheet to dry.
