Macadamia Nuts with Curry Powder, Curry Leaves and Sea Salt Flakes

Ingredients

1 egg white

2 teaspoons granulated sugar

3 teaspoons curry powder

1 1/2 cups Hawaii macadamia nuts; raw and unseasoned

2 sprigs fresh curry leaves; half roughly chopped

Sea salt; to taste

Directions

Yield: Serves 10-12

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a medium bowl add the egg white and whisk until frothy. Whisk in the sugar and curry powder until well incorporated. Add in the Hawaii macadamia nuts and toss until completely coated.
  3. Pour out the Hawaii macadamia nuts onto the prepared baking sheet and spread in a single layer. Roast for 10 minutes. Remove from oven, shake the pan a bit to stir and add the curry leaves. Return the pan back to the oven and continue roasting for about 5 more minutes or until golden.
  4. Remove from oven. Sprinkle sea salt over the Hawaii macadamia nuts while still warm to finish.
