Green Herb Sauce

Ingredients


Serves 1

  • 1/3 cup (50 g) scallion, chopped
  • 2 cups (130 g) garlic chives, chopped
  • 1 tbsp (15 g) garlic, chopped
  • 5 packed cups (150 g) spinach
  • 1/3 cup (75 g) extra-virgin olive oil
  • 1/3 cup (75 g) neutral oil
  • Kosher salt, to taste
  • 1 tsp cumin
  • 2 tsp mint, finely chopped

Directions

Make Sauce

  1. In tall container, add scallion, garlic chives, garlic, spinach, olive oil, neutral oil, salt and cumin. Using hand mixer, blend until smooth, taking care not to overwork. Stir in mint.
  2. Stored in airtight container in fridge, sauce will keep for up to 1 week
