Spring Riis Cocktail

This Spring Riis cocktail is made with snap pea-infused gin.

Ingredients
  •  1 cup Hendrick’s Gin
  • 1/2 cup chopped snap peas
  • 1/2 cup St-Germain elderflower liqueur
  • 1/2 cup lemon juice
  • 6 pea shoots
Directions Yield:  Makes 6 Cocktails
  1.  Combine gin with snap peas and infuse for 24 hours. Strain. Shake infused gin, liqueur and lemon juice in cocktail shaker. Fill 6 glasses with ice and divide mixture between them. Garnish with pea shoots.
