Strawberry Rosé Granita Smash

Serve this wine-based cocktail with a spoon to eat right away, or with a cocktail stirrer to help the ice melt more quickly.

Ingredients


Serves 6

  • 2 cups hulled, quartered strawberries (10 oz. or 280 g)
  • 1⁄4 cup sugar
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh lemon balm or mint (optional)
  • 750 mL full-bodied rosé
  • 2 tbsp dry white vermouth
  • 1 cup sparkling water
  • Lemon balm or mint sprigs, for garnish

Directions

Plan Ahead: The granita mixture needs to freeze at least 4 hours ahead of serving.

Make Cocktail

  1. In large liquid measuring cup, combine strawberries, sugar and lemon juice. Stir and let stand for 10 minutes, or until berries are juicy.
  2. Using immersion blender, potato masher or muddler, mash berries (and herbs, if using) until mixture is mostly liquid with small chunks of berries. Stir in rosé and vermouth.
  3. Pour into glass or nonreactive container that will hold liquid in a shallow layer and fit in freezer. Freeze for minimum of 4 hours, stirring with fork every hour, to break up mixture into flaky shards.
  4. Spoon granita into 6 serving glasses. Pour splash of sparkling water over top and garnish with lemon balm or mint.
