Spicy Homemade Ginger Ale

Ingredients
Serves 6
- ¼ cup ginger, chopped
- 3 strips lemon zest
- 1 cup granulated sugar
- 2 cups water
- 36 oz. soda water
- 3 tbsp freshly squeezed lemon juice
- Ice
- Mint sprigs and lemon wedges (for garnish)
Directions
- In a medium saucepan, place ginger, lemon zest, sugar and water. Bring to a boil. Reduce to a simmer; cook 10 minutes. Remove from heat; let stand for 30 minutes. Pass through a fine-mesh sieve into a bowl. Cool ginger syrup and transfer to a mason jar. Refrigerate until ready to use.
- Place 2 oz. of ginger syrup in each of 6 highball glasses. Add 6 oz. soda and 2 tsp lemon juice to each glass. To each, add ice and garnish with mint and lemon wedges.
