Coulson Armstrong’s Golden Beets with Tonnato

Ingredients


Serves 24

Beets

  • 6 medium golden beets
  • 2 tbsp olive oil
  • 1 tbsp kosher salt

Tonnato Sauce

  • ¾ cup oil-packed tuna, drained
  • ½ cup Bonito flakes, loosely packed
  • 2 anchovy fillets
  • 1 small garlic clove, blanched
  • 2 egg yolks
  • 2 tbsp capers, rinsed
  • 1½ tbsp lemon juice
  • 1 tbsp Dijon mustard
  • ½ cup neutral oil
  • 3 tbsp olive oil

For Garnish

  • 3 tbsp trout roe (or pickled diced beets)
  • Fresh dill sprigs
  • Zest ½ lemon
  • Maldon sea salt
  • Black pepper

Directions

Make Beets and Sauce

  1. Preheat oven to 375°F. Coat beets in olive oil and kosher salt, then wrap in foil. Roast for 45 to 60 minutes, until tender. Peel warm, then slice.
  2. To blender add tuna, Bonito flakes, anchovies, garlic, egg yolks, capers, lemon juice and mustard, and blend until smooth. Slowly stream in neutral and olive oil, until emulsified. Season with salt, to taste, and chill, covered in the refrigerator, for 30 minutes.
  3. To plate, arrange beets overlapping each other in a circular pattern. Spoon Tonnato Sauce on beets. Add trout roe (or pickled diced beets, if using), and garnish with dill, lemon zest, Maldon sea salt and pepper.
