Q: I had the most refreshing cocktail at the Park Hyatt’s rooftop bar. It was crisp and bubbly, with a hint of peppermint. Could you share the recipe so I can make it at home? — DAVID, Markham, Ont.
A: Newly reopened after a redesign by KPMB Architects and Studio Munge, Writers Room is the latest incarnation of the Park Hyatt’s iconic bar. The Red Sky is a twist on a classic sherry-based aperitif from Spain, the fino and tonic, but with Prosecco and peppermint extract. Its red hue is inspired by the cotton candy skies visible from the patio at sunset.

- 1 oz. fino sherry
- 2 drops peppermint extract
- 3 oz. Prosecco
- Blueberries, for garnish
Directions
- To a wineglass add sherry and peppermint extract.
- Top with Prosecco, then garnish with blueberries. Enjoy!
