Roasted Veg with Camembert Fondue

Directions
Yield: Serves 6
- Preheat oven to 400°F. Scrub sweet potatoes and slice into ½”-thick rounds. Seed peppers and slice into chunky wedges. Peel and slice garlic. Toss all in large roasting pan with 1 tbsp each of olive oil and red wine vinegar and pinch of sea salt and black pepper.
- Halve unpeeled onions and carefully place cut-side down directly on oven rack, placing roasting pan of veg beneath. Roast for 45 minutes.
- Remove roasting pan from oven and use tongs to move onions to your board, then remove skins, break onions apart and toss with veg.
- Leaving ½” rim around edge, cut rind off top of Camembert, then nestle into middle of roasting pan, drizzle with a little oil, season with black pepper and bake for final 10 minutes, warming baguette alongside. Pick over basil leaves, and serve!
