Marrakech-Style Green Olives

Recipe: Doug Penfold

Prep Time: 5 minutes

Total Time: 10 minutes

Picholine or Lucques olives originate in France but are commonly used in Morocco to make olive oil. They are excellent cocktail olives but can be hard to find here. Any large green pitted olive can be substituted in this recipe.

Ingredients

  • 2 tbsp olive oil
  • 1⁄2 tsp ground cumin
  • 1⁄4 tsp cayenne pepper
  • 1⁄4 tsp ground cinnamon
  • 1 clove garlic, thinly sliced
  • 1 3⁄4 cups (about 250 g) pitted Picholine or other large green olives

Directions

Yield: Serves 4

Sauté Spices And Assemble

  1. In small frying pan, heat olive oil over low heat. Add cumin, cayenne, cinnamon and garlic, and sauté gently for 2 minutes, or until spices are fragrant and garlic is softened.
  2. Remove from heat, pour spiced oil over olives and toss to combine. Serve at room temperature.
